Job Overview
The Blockman will handle all aspects of meat preparation, from breaking down carcasses to producing mince, sausage, and boerewors. The role requires adherence to hygiene standards, cold chain management, and providing excellent service to customers.
Key Responsibilities
- Operate all butchery equipment, including the bandsaw
- Report defective equipment or utensils to the Butchery Manager
- Control, merchandise, and promote stock according to company procedures
- Prepare and break meat carcasses to laid-down specifications
- De-bone cuts and manufacture mince, sausage, and boerewors
- Prevent wastage, shrinkage, and damages
- Monitor temperatures and maintain the cold chain
- Provide courteous and professional service to customers
- Maintain cleanliness and hygiene of all butchery equipment
- Assist with receiving meat from suppliers
- Train staff on new products or lines as required
- Comply with medical requirements under the OHS Act
Requirements
- Grade 12 certificate
- Customer-focused and a team player
- Good communication skills with the ability to listen and respond appropriately
- Passion for the product and sense of urgency
- Accuracy in completing tasks
- Skills in cutting and preparing various meat products such as loin chops and roasts (skills will be tested)
- Ability to work in a cold environment
- Physical ability to lift carcasses and meat containers
